This sweet cookie ice cream recipe was an absolute hit in Southern Living’s Test Kitchen where our recipe developers gave it a 10 out of 10 for simplicity and taste. The trick is in the cookies. When crushing up cookies to add into the ice cream, be sure to get them to a very fine consistency. This will ensure that every bite is filled with cookies-and-cream goodness.
INGREDIENTS:
Ice Cream Base:
1 cup whole milk
1 ½ cups heavy cream
½ cup granulated sugar, divided
1/8 tsp. kosher salt
1 tsp. vanilla extract
5 large egg yolks

2 cups crushed chocolate sandwich cookies, such as Oreos
Mint Chocolate Chip
1 cup mint sprigs
4oz. chopped bittersweet chocolate, melted
