5 NO PREP SLOW COOKER MEALS | CROCKPOT FAMILY RECIPES | MRS RACHEL BRADY

A slow cooker is an essential piece of kit if you’re a busy mum or dad wanting to get dinner on the table with as little fuss as poss! These 5 recipes (spaghetti bolognese, butternut squash soup, venison chilli, chicken curry and BBQ ribs) are all ‘dump and go’ which means they require no preparation or browning off first at all. Perfect for busy weekdays or weekends when you want to put dinner on before you leave the house and return to a fabulous dinner! Recipes below!

***SPAGHETTI BOLOGNESE***
500g minced beef
1 onion, diced
1 carrot, diced
4 cloves garlic, finely diced
1 beef stock jelly (or cube)
1 tin of plum tomatoes
1 tablespoon dried oregano
S&P
1 tablespoon tomato puree
– Pop it all in slow cooker, stir, pop on lid and cook on Low for 6-7 hours. Serve with pasta of your choice and parmesan.

***VENISON OR BEEF CHILLI***
500g venison steak or beef chuck steak
1 tin plum tomatoes
1 beef stock jelly
1 tablespoon paprika
1 tablespoon ground cumin
S&P
1 diced onion
1 diced carrot
4 cloves crushed garlic
– Pop it all in slow cooker, stir, pop on lid and cook on Low for 6-7 hours. Serve with rice, chillies, sour cream, grated cheese and coriander.

***SQUASH SWEET POTATO & GINGER SOUP***
Half a large butternut squash (or 1 whole small one), cut into chunks
2 sweet pots, cut into chunks
1 carrot, in chunks
1 onion, in chunks
1 celery stick, in chunks
4 cloves garlic, peeled left whole
1 thumb size chunk ginger, peeled and cut into small pieces
S&P
1 x teaspoon cinnamon
1 x teaspoon ground cumin
1 litre veg stock
– Pop it all in slow cooker, stir, pop on lid and cook on Low for 6-7 hours. Whizz. Serve with Greek yoghurt and fresh red chillies and a drizzle of olive oil.

***STICKY BBQ RIBS***
800g pork ribs
1 bottle good quality BBQ sauce (I used Jack Daniel’s)
– Pop it all in slow cooker, stir, pop on lid and cook on Low for 6-7 hours. Serve with brown rice and salad, chips, or jacket potatoes!

***Kid-friendly chicken curry***
6 chicken thigh fillets, cut into chunks
1 can coconut milk
1 can plum tomatoes
2 tablespoons good quality mild curry powder
Handful (about 8) new potatoes, halved
Big handful of frozen peas, at the end.
– Pop it all (apart from peas) in slow cooker, stir, pop on lid and cook on Low for 6-7 hours. When almost ready to serve toss peas on and mix. Serve with rice and fresh coriander.
