INGREDIENTS:
#1 Smoked Paprika & Dill White Bean Dip
1 can white beans, drained and rinsed
1/2 tsp smoked paprika
juice of 1 lemon
1 tsp mustard
1 tsp agave
1 tsp white tahini
salt, pepper to taste (I added about 1/4 tsp salt)
a handful of fresh dill, roughly chopped
serve with bread, crackers, raw veggies etc.
(serves 4 people)
#2 Mango Matcha & Avo Smoothie Bowl
1 cup frozen mango (93g)
2-3 soft dates
1/3 avocado
1/2 tsp matcha powder
a good squeeze of fresh lemon juice
1/2 cup non dairy milk (125ml), more for a thinner consistency
#3 Maple & Cashew Butter Toast
1 piece of bread, I used spelt
1 tbsp cashew butter*
1/4 tsp vanilla
1/4 tsp cinnamon, more to taste
a drizzle of maple syrup
a pinch of sea salt
*for the cashew butter you’ll just need cashew nuts and a good food processor that’s it. (I used 250g)
#4 Mini Apple Pie Parfait
1 apple
1 tbsp fresh lemon juice
1 tbsp maple syrup
a pinch of salt
1/4 tsp vanilla
1/4 tsp cinnamon, or more to taste
1 tsp cornstarch + 1/3 cup water (85ml)
to serve: vegan yogurt + granola, nuts, oats …
