I always wanted to create my version of Honeycomb Cake that is easy, hasselfree and flavorful. Presenting White Chocolate Honeycomb Cake with lemon and honey twist using Apis Honey (https://youtube.com/c/ApisIndiaLimited ) . My day always starts with a dash of lemon in honey and now am ending my dessert too with Lemon and Honey #WhenIThinkHealthy I think of Apis Honey.
1/2 cup milk + 3 tbs milk
1 tbs lime juice + 1 lime juice (to dilute with honey)
1/4 cup oil (any odourless)
1/2 tsp vanilla essence
1/2 cup powder sugar
3/4 cup all purpose flour (maida)
1/2 tsp baking powder
1/4 tsp baking soda
Pinch of salt
2 spoon Apis honey + more honey to spread on cake
1 cup melted whipping cream
120 gm or 3/4 cup white chocolate
To Make Eggless Vanilla Sponge :
Take a small bowl, add 1/2 cup milk with room temperature add 1 tbs lime juice
Take a mixing bowl, add 1/4 cup oil (any odourless)
Add 1/2 tsp vanilla essence
Add 3 tbs milk
Add 1/2 cup powder sugar
Add milk and lime mixture, mix it well with the help of hand whisker.
Place food strainer in it, add 3/4 cup all purpose flour
Add 1/2 tsp baking powder
Add 1/4 tsp baking soda
Add a pinch of salt, seive and mix it well.
Further take a 4 inch round shape cake tin, place a butter paper on it greased with oil.
Pour the mixture and place cake tin in preheated oven for 10 mins at 180⁰ and bake it for 25 mins
(To bake it on stove pre heat pan and bake it for 30-35 mins)
Rest the for an hour when it’s baked and then remove from the mould (insert knife from the sides, clear the sides and demould it on a plate)
To level the cake, slice the top off with the help of knife.
(Bake this remaining part of cake in oven for 20 mins at 180⁰ and crush it to use for cake decoration)
To Make Cake Icing :
Place sponge cake on turn table in a plate, cut it from the sides first and then from the center to make even parts
Keep upper part of the sponge upside down
Drizzle some honey mixture on it (take some water in a glass, add 1 lime juice, add 2 big spoon Apis honey and mix it)
Spread some whipped cream on cake and make a flat layer

Drizzle some honey on it
Place base of the sponge keeping downside up
Again drizzle some honey mixture on top
Cover the sides and top of the cake well with whipped cream.
(Rest it for 10 mins in refrigerator)
Further spread some melted white chocolate on round shape bubble wrap and refrigerate it for 10 mins (melt 120 gm or 3/4 cup white chocolate then cut bubble wrap round shape same as your cake tin size and add chocolate on bubbles side)
Stick cake chura around the cake covering whipped cream
Place honeycomb shape white chocolate on the cake
Cover the sides with chura
Pour honey on top and spread it
