Start by heating some oil in a medium pot over medium heat until hot then add the onions and cook for about 3 minutes until softened before adding the garlic; stir together for another minute. Add in the rinsed lentils along with all remaining ingredients except salt & pepper; bring mixture up to just under boiling point before reducing heat down low enough so that it simmers gently but steadily – this should take around 20 minutes once everything has been combined together properly. Taste test at this stage as you may want more seasoning added such as extra cumin or oregano depending on your preference levels!
Once cooked through completely remove from heat source and serve warm with crusty bread if desired – enjoy!
